Stir-fried Bitter Melon


I am super excited to share this recipe. Growing up in a tropical country, my mom told us eating this vegetable will make our blood taste bitter thus we won't get bitten by mosquitoes. As a result,I now loveeee bitter melon. Unfortunately, I couldn't get my hubby share my excitement until my local mom told me how to cook it to make it less bitter.

First, divide the bitter melon into two


then remove the inside with spoon:

Divide each part into 1/2 and slice into thin pieces

sprinkle a tablespoon of salt,

Rub and mix the salt while applying little pressure with hand

then rinse


Boil in the boiling water for about 5 minutes then stir fry with the rest of the ingredients:

Ready to be enjoyed with rice:


Stir-fried Bitter Melon
Ingredients:
1 large bitter melon {choose the one with big lumps}
1 package of baked bean curd - cut into small slices
1/2 pound of ground pork
3 cloves of garlic - minced
1 shallot - minced
1 big red chili - take out the seeds and slice into small pieces
1 teaspoon fish sauce
1 teaspoon sweet soy sauce
1 tablespoon oyster sauce
Sugar, salt, and pepper - as prefer
1 teaspoon Tapioca Starch mixed with 1 Tb water
1/3 cup of water

Preparing the bitter melon:
Divide the bitter melon into two, remove all the inside with spoon, divide each part into 1/2 and cut into thin slices. 
Sprinkle 1 tablespoon of salt on the bitter melon slices then rub and mix while applying little pressure with hand.
Boil them in the boiling water with 1 tablespoon sugar for about 5 minutes, 

Cooking Directions:
Heat the stir-frying pan, add the oil, when the oil is hot, add the garlic and ground pork - stir fry 'till they changed color.
Add the tofu, oyster, fish sauce, sweet soy sauce, oyster sauce, sugar, salt, pepper, and water, continue stirring 'till all the ingredients are mixed and cooked. 
Turn down the heat. Add the tapioca starch mixture stir gently 'till thicken. 
Eat with rice
