Spinach Salad with Balsamic Vinaigrette

We have been buying fresh spinach from the Farmer Market. We tried this dressing one day and it was a hit.




Spinach Salad with Balsamic Vinaigrette
Ingredients:
Balsamic Vinaigrette dressing:
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
2/3 cup of olive oil

The salad mix:
We use spinach, boiled eggs, fried bacon, stir fried mushroom but feel free to add/ omit anything such as raisin, cherry tomatoes, chopped carrots, sliced red onion, walnuts, etc

Directions:
Mix all the dressing ingredients in a screw-top jar (I put mine in a mason jar) and shake to combine.
Toss a few tablespoons of the dressing on the top of salad ingredients
If not using dressing right away, cover and refrigerate, whisking or shaking again before use.

  1. YUM! Some toppings my mom use on her spinach vinaigrette salad are dried cranberries, cut-up pieces of pepperonis/ ham, and blue cheese. SO GOOD! my fave salad.
