The weather is nice this week so I can fry something outside. It's nice to make this since I can use the meatballs in my soup as well.

Empek-empek Bulat/ Indonesian Fried Fish Meatball
Printable Recipe
4 Shallots - minced
4 Tbs Fried Shallots
1 stalk Green Onion - sliced thin (the fish paste that I bought from Lion has green onion in it so I skipped this one)
1 lbor 450g Fish Paste
0.8 lb or 360g Tapioca Flour
2 Tbs Coconut milk
1 Egg throw away some of the white
3 teaspoon kosher salt
75 ml water

Additional ingredients to serve the meatball with:
1 pickle/ cucumber - sliced into small 1/4 x 1/4 inch square
Boiled egg noodle or/ and boiled rice noodle, fried shallots for garnish

In a big bowl, prepare cold water mix with salt.
Add in the fish paste, coconut milk, egg, minced shallots, fried onion and green onion, Tapioca Flour. Mix them well - I find it easier to use my hand but you can use wooden spatula if you prefer
Make them into round shape (like big meat ball) about 1 1/4 inch in diameter:

Heat the oil in deep fryer. Then fry the fish balls until light brown or 'till cracked. { lower the heat to medium and fry them for about 6-8 minutes}.
Ready to be served with the sauce

Sauce's ingredients:
3 cups of water
1/3 cup Vegetable Vinegar
0.5 lb Brown Sugar - sliced thin
2 Tbs Minced Garlic
3 pieces Thai Chili / Cabe Rawit - sliced thin
2 ts salt
2 Tbs Sweet Soy Sauce / Kecap manis
3Tbs Preserved Cabbage
1.5 Tbs dried shrimp - minced

Preparing the sauce:
In a bowl, mix in vinegar, salted cabbage, garlic and sliced chili, marinate for at least 2 hours
Boil water with sliced brown sugar. Once the sugar is dissolved, add the above mixture
Add the salt, dried shrimp and sweet soy sauce and continue stirring 'till cooked
Adjust the taste as prefer

We often sliced the meatball and cook it with egg like omelet
And serve with boiled noodles
Lastly, add the diced cucumber and fried shallot on the top
