Gudeg Jogja

Sunday, August 2, 2009

I was in the middle of cooking this when I noticed that my "daun jeruk" ( kaffir lime leaves) stock was almost gone as I used some for this meal. We usually asked them from our friends at church who have the plants. Interestingly, just as I finished cooking, Silvi called to ask me if I want some of her lime kaffir leafs since she was just about to prune her plant. Off course I said: "Yes." What a timely blessing! Thank you, neighbor! =)
Below is the recipe for my future reference:

Gudeg Jogja

Ingredients
1 small chicken cut into small pieces
5 egg - hard boiled, peeled
1 can or 500 gr green jack fruit
1 package fried tofu (cut into smaller pieces) - I don't know if the original Gudeg has tofu I  add this just for variety. :)
1 piece of beef bone
800 ml water
1 can or 400 ml coconut milk
1 tsp vinegar
4 tbs palm sugar (gula jawa)
4 Indian bay leaves (daun salam)
4 kaffir lime leaf
1 bruised lemongrass - cut into 3 pieces
2 tbs fried shallots

Minced ingredients:
10 Shallots
2 Candle nuts
5 Garlic cloves
2 tsp Coriander powder
1 tsp cumin powder
2 tsp Tamarind
4 tsp salt
2 tsp sugar
1 tsp galangal powder

Method:
1. Using pressure cooker (or regular pot) to cook these ingredients (below) for 20-30 minutes or 'till tender: jack fruit, beef bone, chicken, the minced ingredients, water, coconut milk, lemongrass, & vinegar.
2. Open the pressure cooker, then add the rest of the ingredients: palm sugar, egg, tofu, indian bay leaf & lime kafir leaf. Bring it back to boil and cook up to your desired thickness
3. Taste, add sugar/ salt as you prefer then add fried shallot before you serve.
4. Serve with rice & craker (krupuk)
